We are just over halfway through the ESY Summer Camp season. Each week we are welcoming a new group of campers to join us in the garden and kitchen to explore what it means for food to go from seed to table. We are spending time learning to make delicious seasonal food with produce we harvest in our garden (or purchase at the local curb market). Some of the delicious dishes we’ve made include quiche, tomatillo salsa, pesto, ground cherry salsa, panzanella (an Italian bread and vegetable salad), and homemade ice cream. Campers are tasting things they’ve never tried before and often discovering that the new foods are delectable! We’ve sprouted mung beans, played with chickens, and held a farmer’s market of our own as well. Look for day camps in the fall and spring (during school holidays) and weekend and evening programming for adults who wish they could come to camp!
